Its been pretty quiet on the blog....only because its been insane outside of the blog. I can't believe its already Friday...the weeks are flying by and i feel like I'm missing summer because of this rainy weather! This week was just hanging out and out of the cold, wet, rain...and on the nice days we went out and enjoyed the sunshine...this weekend is full of exciting things like a school closing program, family time, bike ride, filling orders and Nana's 99th birthday!

Looking forward too some much needed family time...and preparing inventory for the Harvest Moon Health store for our meeting on Monday! I'm so excited and praying it goes well! I personally love that shop, its the only health food store around in Ct and i usually go to buy dried pineapple rings and yogurt covered pretzels for a summer treat!

Lowfat Banana-Plum Bread
So good you won't miss the fat.
Diet Types: Low Fat, Low Sodium, Vegetarian
Ingredients:
  • No stick cooking spray
  • 1/2 cup Dried Plum Puree
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1 1/4 cups mashed very ripe bananas
  • 2 1/2 cups unbleached all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup lowfat buttermilk
  • Serves: 16
    Cooking Time: Any
    Instructions:
    Heat oven to 350 degees F. Lighlty coat 9x5 inch loaf pan with cooking spray; set aside. In large bowl, blend Dried Plum Puree, sugar, water and vanilla. DRIED PLUM PUREE: Blend 2/3 cup pitted dried plums with 3 tablespoons HOT water. Stir in banan just to blend. In medium bowl, combine flour, baking powder, baking soda and salt. Add to dried plum mixture, alternating with buttermilk and blending thoroughly. Spread batter in pan. Bake in center of oven about 1 hour, 15 minutes or until wooden pick inserted into center comes out clean. Cool in pan 10 minutes. Turn onto rack to cool completely. For best flavor, wrap and store overnight before serving. Tip: 1/4 cup skim milk mixed with 1 tsp vinegar can be substituted for buttermilk.
